Instant Mor Kuzhambu / Instant Majiga Pulusu

Mor Kuzhambu (as known in tamil nadu) or majiga pulusu as known in andhra pradesh is a gravy that is made with sour buttermilk. Mor kuzhambu comes from Kerala and is made with lots of coconut. There are many ways of preparing mor kuzhambu. I'm giving below the instant version of it which was given by Chitra Viswanathan of IndusLadies.

A variety of veggies can be used for its preparation like yam, colacasia ( senaikizhangu/chamma gaddalu), carrot, ladies finger, bottle gourd (sorakai/sorakaya), snake gourd (podalanga / potlakaya), white pumpkin etc.


Only time consumed here is for boiling the veggies considering the instant powder is ready for use. :) You can either boil the veggies over stove or steam them in microwave for about 5 minutes on full power and about 3 minutes on half power.

Ingredients
  • Curd - 1 cup, sour or slightly sour
  • Vegetable - of your choice
  • Salt - to taste
  • Turmeric - 1/8 tsp
  • Pepper Powder - as required
For tempering
  • Mustard - 1/2 tsp
  • Jeera - 1/2 tsp
  • Urad Dal - 1/2 tsp
  • Methi - 1/8 tsp
  • Red Chillies - 1-2 (optional)
  • Hing - a pinch
  • Curry leaves - few
  • Oil - 1-2 tsp
For instant powder
  • Gram Dal - 4 tbsp
  • Jeera - 3 tsp
  • Fenugreek / Methi / Venthayam / Menthulu - 1/2 tsp
  • Whole Peppercorns - 1/2 tsp
  • Red Chillies - 8-10
Procedure
  • Dry roast all the ingredients for the instant powder. Once cool, powder the ingredients and store the powder in a air tight container.
  • Boil the veggies with minimum water adding a little pepper powder, turmeric and salt.
  • In a container, beat the sour curd well and add 1-2 tbsp of the instant powder. Mix well.
  • In a skillet, add a little oil. Add the ingredients for tempering. Add the tempering to the above curd mixture.
  • Once the veggies have boiled, stir well and switch off the stove. After 2-3 minutes, add the tempered curd mixture. Add salt if found less. Mix well and serve.
