Potato Sandwich

We were getting bored with regular breakfast items like idlies, any dosa variety, poori or pongal. So we decided to go for potato sandwich. We were having it after a really long time. My DH is a person who does not like to experiment much with food. Hence generally at home, its the traditional items that get prepared. But somehow he agreed to go for sandwiches for breakfast. So I was happy :)



Sandwiches are quick fix breakfast item. Gets ready in no time. This sandwich is with potato curry filling. The only time you would spend is in preparing the curry. You could either use left over potato curry or go for a freshly prepared one.


Sandwiches can be made either in the sandwich maker or on tawa. Last time I had prepared in the sandwich maker. This time, since we are going through a power crisis in AP, there are power cuts for 2 hours in the morning and 2 in the afternoon. So I made this time on tawa. I loved preparing these sandwiches on tawa rather than in the sandwich maker. :)

Ingredients
Makes - 12 sandwiches

For Curry -

  • Potatoes - 3, medium
  • Carrot - 1
  • Tomato - 1, chopped
  • Onion - 1, medium, chopped
  • Green Chilli - 1-2, finely chopped
  • Red Chilli powder - 1 tsp
  • Garam Masala - 1 tsp
  • Coriander/Dhania powder - 1 tsp
  • Turmeric - 1/4 tsp
  • Curry leaves - Few
  • Coriander - few sprigs, finely chopped
  • Salt - to taste
To Temper -
  • Jeera - 1 tsp
  • Mustard - 1/2 tsp
  • Urad Dal - 1/2 tsp
  • Oil - 2 tbsp

For Sandwich -

  • Bread Slices - 24
  • Butter - as required

Procedure

Boil and mash potatoes, carrot. Keep them aside.
In a kadai, heat the oil and temper. Add finely chopped curry leaves.
Saute onions, green chillies, ginger until onions are translucent.


Add tomatoes and cook until mushy.


Add the dry spices, salt and cook for 2 minutes. Add a little water and let it cook till the water has almost evaporated.


Add the mashed potatoes, carrot and mix well. Cook for another 2 minutes.


Finally add the coriander leaves, mix well and set aside to cool.


Keep the curry aside till it cools down.


In a tawa, toast the bread slices on both sides till very slightly brown. This step is optional. You can directly make the sandwich and then toast them with butter. But I prefer doing it this way.


Once the slices are a little cool, smear the prepared potato curry on one of the slices and close with the other. Prepare all the sandwiches in similar manner.


Now add a very little butter on tawa. Place the prepared sandwich and slightly toast. Flip and toast the other side. You'll see that the outer sides have become somewhat crisp.


Your yummy sandwiches are ready to be served hot.

Note:
You may add peas, corn or anything you would like to have in the curry. You could also add in some additional spices like amchur powder, jeera powder.
