Tomato Oats Soup

In my quest to weight loss, I googled for various low cal recipes. One of them was the Super Duper Tomato Oats soup which I had hit upon a blog in www.indusladies.com.

I prepare this soup first thing in the morning and stock it. When ever I'm hit by the hunger pangs, I have a bowl of this soup and I feel full for the next 2-3 hours. And what I liked about this soup is that no thickening agent like corn flour is required :) Oats bring in the thickness to the soup.

I tweaked the recipe to my taste. I added in onions and cloves which gave an excellent taste to the soup.

Also this soup is a nice way to sneak in the goodness of oats for those fussy people without making the presence of oats obvious.

So go ahead and try this simple, delicious soup and have fun :)

Sending a piping hot bowl of this soup to Srivalli's Soup and Salad Mela. Hope you love it Srivalli. :)

Ingredients
  • Tomatoes - 3 (big)
  • Onion medium sized - 1
  • Carrot - 1
  • Green chilli - 1
  • Garlic cloves - 3-4
  • Cloves - 4
  • Oats - 3 tablespoons
  • Salt - to taste
  • Pepper - to taste

Procedure

  1. Peel the skin of the onion and pierce the 4 cloves.
  2. In a pressure pan, add the onion with the pierced cloves, tomatoes, carrot, garlic cloves and green chilli. Add enough water to just cook the vegetables. Don't add more water at this stage. You may adjust the consistency at a later point.
  3. Once cool, remove the cloves from the onion and run through the blender with other ingredients you've just boiled.
  4. Now transfer the puree into the pressure pan. Add the oats, salt and bring to a boil. Adjust the consistency of the soup by adding in water.
  5. Add in either the ready made pepper powder or freshly ground pepper to the soup and serve hot.

Other variations / Serving Suggestions
  • You can add coriander while boiling the veggies for a nice twist :)
  • You can add 1 tsp flax seed powder while adding the oats to have your protein rich tomato soup.
  • Add in crisp croutons just before serving the soup.

Experiment further to discover new tastes :)
