This is one soup which my DH and I love. We always end up ordering this soup at the restaurant most of the times. Here's how to prepare this simple and heart warming soup.
Serves - 4
Ingredients
- American Sweet corn kernels - 1/2 cup
- Water / Vegetable stock - 4 cups
- Butter - 1 tbsp ( you can use olive oil instead)
- Onion - 1 small, julienne
- Carrots - 1/4 cup, diced
- Green beans - 1/4 cup, diagonally cut
- Spring onion - diagonally cut, a small bunch
- Garlic - 1 tsp, minced
- Sugar - 1 tsp (optional)
- Salt - to taste
- Black pepper powder - for garnish / to taste
- Corn starch - 1 tbsp
Procedure
- Boil the sweet corn kernels. Grind half of the corn with a little water and keep aside.
- In a pan, heat the butter/oil. Add the garlic and saute.
- Add onions and saute till translucent.
- Now add all the veggies except corn reserving few spring onion greens for final garnish.
- Saute for few minutes before adding the corn puree and the corn kernels.
- Add vegetable stock/water , sugar, salt and boil till the veggies are half done. Soup tastes better when the veggies are a little crunchy. :-)
- Mix the corn starch with little water and add gently while giving the soup a nice stir. Stop adding the corn starch mixture once the desired consistency is reached.
- Finally garnish with spring onions.
- Serve in a soup bowl sprinkling a little black pepper.
