Idly Upma with leftover idlies


You have quite few leftover idlies on hand. You are wondering what to do with them. Here’s a simple upma made with leftover idlies. This upma is quite common as most people make it.

There are couple of other options you could do with idlies. Cut them into chunks and deep fry. Serve with sauce, chutney. They taste like vadas Smile But for today’s recipe, we shall see how to make upma with leftover idlies.


Ingredients

  • Idly – 2
  • Onion – 1 medium size, chopped
  • Green chillies – 2 , chopped
  • Turmeric powder – a pinch
  • Salt – to taste
  • For seasoning
  • Urad dal – 1 tsp
  • Channa dal – 1/2 tsp
  • Mustard – 1/2 tsp
  • Groundnuts – 2-3 tbsp
  • Curry leaves – few
  • Hing – a pinch
  • Oil – 2 tbsp

 Procedure

  1. In a kadai, heat oil. Add the items listed in seasoning and fry till dals are golden brown, groundnuts are done. Add hing once dal changes colour.
  2. In the meantime, crumble the idlies and keep them aside.
  3. Now add the chopped onions, chillies and saute till onions are soft.
  4. Add turmeric powder. Mix well. Add salt to taste. Remember, idlies already have salt in them. We are adding salt only for the seasoning.
  5. Stir in the crumbled idlies and fry them on low-medium. I love when the crumbly mixture sort of becomes crisp. Not crispy crisp but just little crisp. Smile
  6. Once done, dish it out to your serving plate.
Note:
This can be had as such without any sidedish. If you want to add more taste to it, add idly podi/curry leaves podi to it when adding the crumbled idlies in step 5.
