Bhindi Gravy

My husband just loves Okras. But I get fed up making the same old bhindi fry. So sometime back I just experimented on this recipe and he just loved it. Once in a while I make this gravy. I just added whatever masalas I felt like adding and that were available on the countertop. :D

Bhindi gravy

I normally steam the veggies in microwave to cut down on the oil used. You can even steam the veggies over stove or use without steaming. If you do not steam your veggies, you might need to add a little more oil and cook for a little longer than mentioned here.

  • Okra / Lady's Finger / Bhindi - 1 Cup, Chopped into 1 inch pieces and steamed
  • Onions - 1, julienne (cut into long thin strips)
  • Tomatoes - 1 diced
  • Coriander Powder - 1 tsp
  • Cumin Powder - 1/2 tsp
  • Red Chilli Powder - 1 tsp
  • Tamarind Paste - 1 tsp
  • Turmeric powder - 1/4 tsp
  • Salt - to taste
  • Oil - as required
To Temper
  • Mustard - 1/2 tsp
  • Urad Dal - 1/2 tsp
  • Jeera - 1/2 tsp
  • Red Chilli - 1 pinched
  • Hing - a pinch
  • Curry leaves - 1 sprig
  • Coriander - a few sprigs chopped to garnish
  • In a kadai, add oil and temper as given.
  • Add onions, tomatoes, salt, turmeric powder and saute well.
  • Add the dry powders and saute. When the raw smell of the powders is gone, add the chopped, steamed okra.
  • Add tamarind paste and a little. Cook for a couple of minutes.
  • Add chopped coriander and remove into a serving bowl. Serve with chapathis or hot rice.

Variations -
You can add garlic if you prefer. The taste is better :) Just add about 2-3 garlic cloves. Not more.
