Eggless Chocolate Cake

When I had bought the microwave oven last December, one thing I wanted to try quite desperately was the eggless chocolate cake. I had bought a couple of tins for baking the cake and had got all the ingredients ready. I googled for various eggless cake recipes and tried this one for the new year. :) The 2nd one I baked came much better. So what I learnt was that the measurements need to be exact and not approximate for baking cakes. Also, don't beat the mixture for too long or short.


So here's how I went about it. I've used the standard measuring spoons and cups set.

Ingredients
  • Maida or all-purpose flour - 1 1/2 cup
  • Cocoa powder - 1/3 cup
  • Baking Soda - 1 tsp
  • Powdered Sugar - 1 cup
  • Vanilla Essence - 2 tsp
  • Vinegar - 2 tsp
  • Salt - 1/2 tsp
  • Oil - 1/2 cup
  • Chilled soda or chilled cool drink like coke, sprite - 1 cup
  • Butter - for greasing
  • Maida - 1 tsp for dusting
Procedure
  • Preheat the microwave oven in convection mode at 180oC
  • Grease the tin with butter at the bottom and on the side. Dust with Maida flour and keep aside.
  • Powder the sugar, sieve and keep the measurement ready.
  • In a bowl, keep a sieve and add in all the dry ingredients. We are sieving all the ingredients before whisking to ensure that the mixture is free of any lumps.
  • Add vanilla essence, oil, vinegar and beat with a whisk till all ingredients have blended well.
  • Add the soda or the cool drink and quickly whisk it. After adding soda, the cake needs to be baked immediately.
  • Add the batter to the dusted pan and tap it slightly on the table for it to spread evenly and to avoid the presence of air bubbles.
  • Bake in convection mode at 180oC for 25 minutes. The indication that the cake is done can be tested by inserting a toothpick or a knife at the center of the cake. If the knife/toothpick comes out clean, your cake is done else bake it for some more time.
  • Give the cake a standing time of 3-4 minutes before removing it from the oven.
  • Transfer the cake to a wire rack for the cake to cool.
  • If you wish you can do the icing for the cake else serve as is. Tastes good either way.

I have an LG microwave, today i m going to bake my first cake following this recipe. Well explained prep method. Will let you know after the try :)
