Vegetable Juice

These days with lesser healthy food and lots of junk, its become essential to increase the intake of fruits and vegetables. In our house, we have started to have the vegetable juice on a daily basis. Morning I wake upto barley, lemon, honey water instead of tea. In the evening when my husband is back from work, I prepare fresh vegetable juice. I'm even getting used to green tea after breakfast.


For any vegetable juice always choose atleast 1 water based vegetable like white pumpkin, tomato etc.

For this juice I'm using tomatoes. You may even use pumpkin.

I'm giving a salt based juice, sweet juice and a plain one.


Ingredients
Serves - 3
  • Beetroot - 1 big
  • Carrot - 10-12
  • Tomato - 2
  • Lemon Juice - 1 tsp (optional)
  • Salt - to taste (optional)
  • Pepper - to taste (optional)
  • Honey - to taste (optional)

Procedure
Blend all the ingredients in a juicer with sufficient water.
Filter to remove the pulp and serve.

For salt base -
Add required salt, pepper and lemon juice; mix well and serve

For sweet base-
Add honey as required; mix well and serve

Variations
You can use boiled peas, beans, fresh mint leaves while blending in the juicer. Mint leaves give excellent flavor to the juice.
